Bacardi superior rum originated in 1862, created by Don Facundo this was the first rum created by Bacardi and now the most popular rum in the world. When the distillery was first opened an army of fruit bats were found in the rafters and since then it graced every single bottle of Bacardi rum. It is a white rum that is the key to the heart of many cocktails known and loved today, for example the original mojito and Daiquiri.
Bacardi Superior rum was fashioned because the only rum that was available was harsh and not aimed at the gentleman of the time. To create his superior rum Don Facundo had to find the highest quality of ingredients, including a unique strain of yeast which he found growing in the sugarcane fields outside Santiago de Cuba. This proprietary strain of yeast became known as ‘LA Levadura Bacardi’ and continues to be used today to provide the unique flavour found in Bacardi rum.
Don Facundo also distilled two separate spirits to create his light well balanced rum. Aguardiente being the first, a careful rum with a distinct flavour and aroma that provides the backbone for Bacardi and the second being a spirit called redestilado which he distilled several times to produce the lighter more delicate spirit.
He also added in charcoal mellowing to the creation of his rum, and purposeful ageing. These are all techniques that got passed on through the family of Bacardi and are still used today.
